A substance is a single chemical compound, like sugar or salt or water. A mixture is a combination of two or more different compounds, for example, sugar dissolved in water. A mixture can by separated by physical means into its components. So, the sugar water solution can be separated by evaporating off the water and leaving the sugar behind. A single substance cannot be separated without a chemical reaction.
