We did a defrag and clean-up un the computer.
Now, many of my picture, video and other files, when shown on windows explorer as a list (not thumbs or tiles) are blue, like they were an external link. They still open like they should, but the text is blue. Why?

As part of the Disk Cleanup, you must have told it to "Compress Old Files". So it found a bunch of files that you had not used for a long time and "compressed" them. It changed them to a format that takes up less space on your hard drive (but that's a little longer to open because they have to be converted to the original format each time you open them, and back each time you close them). The blue color is to let you know they are compressed.

If you were to try to copy them to another media (floppy, CD, memory stcik, etc.) they would be uncompressed before they are copied. So the blue is a warning to allow space for expanding when selecting files to copy to one of those media.

That happened to mine too. It means someone has hacked your computer and is stealing those files.
You need to throw away the computer and get another one. Thats what I did.
