You are referring to a commercial roofing material. The group is known as single-ply, and includes several materials. Basically it comes in rolls and is laid down as a single layer. Seaming is not an amatuer job, but it is sometimes available in very wide sections. Single plys have been replacing hot tar roofs for a long time, and now dominate the market.

Primary application of single ply is for very low slope roofs, as most commercials are. These materials will do the jobs that couldn't possibly be done with shingles of any kind. I've used it frequently for tough spots in residential construction.

Polyester type is a plastic coated fabric; very tough and long lasting so long as it's not perforated. Easily patched, however.

Most single ply is EPDM rubber. This looks like the old inner-tube rubber and does not have a fabric ply as the kind above does. EPDM is cheaper and works well. However it's black or dark grey, and for visible roofs the fabric types come in a variety of colors and are often chosen for that reason.

Never heard of polyester roofing before. There are built-up roofing systems that utilize asphalt layers, pvc layers and rubber layers. Could PVC be what you're looking for?

No matter, each system uses layers and usually hot tar between them to seal the layers to keep moisture out. Email me if you have any other questions.
