I have exactly one week to lock down my classes, and I am completely clueless as to what I might enjoy.

Try taking some general courses that you will need no matter what degree you eventually go for, like a 100 level math, English, and History course, then add something that sounds like fun, like a PE, or Drama.
While you are in the building next week registering, take some time to go meet your advisor. You'll get much better direction from him/her than from us.

Well give it a little time and think or write a list of the things you like to do in the workplace. Then talk to a counselor and he or she might tell you what majors are in the areas that you like to do.

Take the catalog to a quiet place and read thru your options . .
Your heart should give you some ideas and take a mix so you get some diverse exposure.
This is like tasting at a buffet, you will discover thru experience what you actually like & don't.

What do you have passion for?? What captures your attention when it's mentioned? You might want to look for these signs and they might be able to help.
