Most of the time it's just chance meetings, but if you go to a lot of sporting events you have a decent chance. I once met Shaquille O'Neal while I was at work one day. He just came in to the Friday's I was serving at and sat down at a table with his wife, kids, and two personal assistants. He's a really good guy and his only request was that he could just eat in peace without being hassled by everyone there. That's basically the attitude that most professional athletes have though. They just want to be treated like they were your neighbor.

I was at Bayside Marketplace in Downtown Miami when I happened to meet a couple of the Miami Heat players, as well as chanced upon Gloria Estefan on a separate occasion. Just happened to be in the right place at the right time. Find out what they like doing and where they hang out, what clubs they go to, etc. and keep trying to be there. Eventually you might get to meet one by chance.
