Video games are always good projects, because they are very sophisticated programs that will show off your knowledge, plus if they are fun they tend to put your professor in a good mood.
Otherwise, try building something else fairly complex for a student, such as a word processor or a web browser. As with any other assignment, the best way to get a good grade is to do something nobody expects from you.
