I guess you have to understand protein targeting or protein sorting by taking an example rather than by going through a straightjacket explanation offered by wikipedia, which is meant for higher groups. See, in the post office a postman gets hundreds of letters to be delivered to the people. Each envelope has an address, which he has to read and then accordingly find the addressee. Similarly, when a protein is made (synthesized) it has certain sequences as addresses called signal sequences, which enable it to be delivered to the area of the cell or outside. The recipient also has a signal sequence that enables it to be identified. The efficiency, divergence, and specificity of virtually all intracellular metabolic and signaling pathways depend on protein targeting. This process has an important role in regulating physiological and pathological processes.

Protein targeting or protein sorting or protein localization is the mechanisms by which a cell transports proteins to the appropriate positions in the cell or outside of it. Sorting targets can be the inner space of an organelle, any of several interior membranes, the cell's outer membrane, or its exterior via secretion. This delivery process is carried out based on information contained in the protein itself. Correct sorting is crucial for the cell; errors can lead to diseases..
