This sounds like a trick question: the true answer is it is NOT PROFESSION but by INFLUENCE ON THE LARGER SCOPE OF HUMAN PROGRESS (even though some positions, like a country's leader, tend to have more influence).
Dr. Michael DeBakey created the world's first long-term functional artificial heart (see http://en.wikipedia.org/wiki/Michael_DeBakey) and saved thousands of lives. Mahatma Ghandi saved thousands by leading his country out of war. Yoshiro Nakamatsu (world's greatest inventor) has made countless improvements to the lives of everyday people concerning technology. Bono of U2 has created a clothing label, among other innovations, to bring about employment to thousands in third world countries enabling them to earn food and avoid hunger. The philosopher Hippocrates created the foundational scientific philosophies for all medicine and care that sustains and extends human life.
There are numerous examples of great positive, evolutionary influence across MANY MANY PROFESSIONS.

I always thought the Psychologist. Because you can help anyone regardless of who they are or their beliefs... I dont mean the psychiatrist that hands out drugs like candy.. and covers up problems with easy fix its.... NO... I mean the psychologist.. one who studies for 6yrs to get a Masters and then 3yrs understudy and then another 2yrs to get a Doctorate. Anyone Lcp or Lcpc means that they know the HUMAN experience, the human perception, and how to correct perceptions how to help those without anyone to help them...........and if given a chance psychology could help us all to evolve a LOT more than we have already. We have a long way to go and most of us do not know enough psychology to know the way to diffuse an angry person. Its called Witness and Validate and no one knows how to do it or what it is.... its very sad that we do not take the time to teach our children psychology. The number ONE thing you will have to deal with and figure out in this world is People.

I agree with The K.A.N.'s answer, that is, teaching (or pedagogy, a more academic term) since in every country in the world has long been striving for advancements in every field of studies from K-12, bachelor-doctoral level of education. One of the reasons is that the country needs her best human resources from those graduates from colleges and universities to serve or contribute their wisdom or potential to the community/society so that, over time, she can prosper and develop economically and professionally by the great and formidable brains and the commitment to their motherland. Therefore, teaching is the key to all developed countries worldwide and, I think, those developing ones follow suit.

I think a man without a profession is the happiest man. This may sound rather hypothetical but someone who can just be himself, who has a small family, who grows his own veg in his backyard, doesn't care much about what's going on in the world, doesn't compare himself with other people, wakes up in the morning, does his stuff during the day and sleeps at night, is the best profession. Simple life is the best life.

To me, Police Officer. I get into fights almost every other night, during a critical incident, I am asked to give direction. I am called upon to bring social order from chaos. I write reports every night. And I work with a team of professionals who never let me down. I may be called on to help deliver a baby, or deliver a message of death to relatives. The beginning and end of life. I have seen things that could gag a maggot. And I have seen things that from there sheer beauty can draw a tear. Yes, I think I have the best job ever.

Other than the experts in Bible translations, I would think a road contractor. Without the expert road (and bridge) builders our travel would be very limited. The time it would take to get from point A to point B would make most trips not worth the time, nor the hardship on vehicles. Going to town in the olden days was a full days chore, now we can run several errands within very short time thanks to the people that build our superior roadways.

The greatest profession a person could have: teaching. A teacher is what I think is the greatest profession. You're giving a vital lesson to those who need it most. That's heroic and a really unselfish thing to do.

I don't know a certain profession but anyway something that allows you to help poor people or disabled people.Sometimes a smile worth's more than all the money you need, sometimes a smile can make you happy realizing that you made someone else happy and sometimes a smile is all you need to know that you're doing something good.

Being a doctor, because a doctor can really CARE. Dr Schweitzer for example was such a man, and he was also a great organist so he gave concerts in Europe to earn money for his hospitals in Africa. If Gandhi was named "mahatma" (a great soul) then I would call Dr Schweitzer "mahatma Schweitzer".
