Considering that the history of the heart may be tracked all the way back to Ancient Egypt, the Bible, and Aristotle (the scientific foreman, whose philosophy was unquestioned for centuries) as a symbol for vitality and soul.

These characteristics can be ascribed probably to the fact that the heart was considered to be the most important organ by most old civilizations; furthermore, vitality and love are considered by many ancient cultures to be at an equal level and were considered to have a lot to do with the blood. In any case, the implications of the heart's importance made it the symbol of choice for love, soul, and emotions.

Well, the heart represents the symbol of love because it is said that it is the place where the soul resides. It is what connects us all with each other. In principal, the brain represents the logical side of a person, and the heart represents the emotional. Remember the symbol of a heart that we draw is not what the real heart looks like at all. It is the word associated with the symbol that draws us closer to each other.

LOVE is supposed to come from Heart and not from mind or any other part. If someone fails in love we say Heart broken, so heart is the symbol of love-

HEART-
A universal symbol of love, the heart has held meaning for centuries. In pagan and early Christian eras, it was thought to be the center of emotion. To the Victorians, the heart symbolized love, courage, and intelligence. Now when one bestows a heart to another, the message of "I give my heart to you" is unmistakable. All of these pendants communicate that sentiment beautifully.

I believe it has to do with ancient medical knowledge/belief. Seach for "The Humours," I believe they were thought to control illness and good health and the heart was a source of different humours which had to do with love. We know now that it was purely associative reasoning - heart beats faster when girl meets boy... heart beats too fast sometimes ie heartbreak... I know I;m at least close on this one.
