I can only assume that you're joking. You haven't even started your position yet and already you're thinking of taking time off. Unfortunately this is the working world not school with recess or play time. Any employer would be doing their company a dis-service if they hired you.
If you weren't interested in showing this employer how much this opportunity was worth to you why did you even bother taking it? If I take on an new employee I would expect them to show me that they are ready and willing to work and show enthusiasm. You obviously have no respect for this opportunity and certainly aren't ready to begin working in the real world.
If your one week of play is more important than this opportunity then my suggestion would be to decline this job offer before even starting it. I am quite sure they would be able to find someone who would appreciate this opportunity and use it to enhance their education and experience. It is painfully obvious that you are not mature enough to realize that jobs don't grow on trees nor do you as a newbie get to set conditions for employment standards to suit yourself.
So to answer your question: You may as well take the entire spring break as playtime because you're certainly not the type of employee material future employers are looking for.
I apologize for sounding harsh but as an employer I get burned by immature people all the time - it costs me valuable training time and money each time I have to hire someone new again.

Depends on the school if they give time off during that period or not. Ask the professor in charge of your internship that you can hook him up with some young hotties for him and he might give you two weeks off.
