I absolutely love everything Professor Dumbledore says. My personal favorites are probably:
"Nitwit, Oddment, Blubber, Tweak" from his welcome speech to the students in Sorcerer's Stone
and
"I would assume that you were going to offer me refreshment, but the evidence so far suggests that that would be optimistic to the point of foolishness" from his comments to the Dursley's when picking Harry up at the start of Half Blood Prince (particularly the "optimistic to the point of foolishness" part because it seems to fit so many real-life situations.
