What are you trying to accomplish?
If you want to grow crops quickly so that you can get them to market, then leaf lettuce, spinach, green onions, and radishes are all fast crops.
If you want to improve your soil, so you're hoping to grow plants that can be plowed back into the soil quickly to improve its nitrogen content and so forth, consider alfalfa.
If you need to grow feed crops quickly for forage by pasture animals, you could try small grains like oats, wheat, barley, triticale, and rye.

Alfalfa can be VERY exspensive, anywhere from $ 50.00 to $300.00 per bushel. But it does grow for as long as 5 years, It is not meant to be turned.
Try using Buck Wheat. You probably can order it from a C0-OP.
The government pays farmers to grow Buck-Wheat. It adds nitrogen to the soil.

If you mean "turned over" as actually turning the soil over, then there are things like rye, or other short lived grasses. If it means "turned over for cash", then things like lettuces, radishes and green onions are what you are looking for. And do they ever have a ton of lettuces! The kind you'd be looking for are "leaf" lettuce, not "head" lettuce.

I think radishes are the fastest growing crops but I don't think you can grow them in two weeks.
