It's true because electric stovetops heat the metal by direct conduction, whereas gas stovetops have an element of convection to them (albeit a very direct form of convection). As such, the heat from the flame will tend to heat the metal much more evenly than the heat from an electric coil. Evenly heated pans = evenly heated foods and vice versa.

I think GAS stovetops burn stuff more easily. Because they get hotter. You are probably putting your food on the stovetop too early and not allowing it to get warm.

If you are switching from gas to electric the transition can always be difficult. Use nonstick pans!

It's not you. I hate electric stove tops. You don't have as much control of the heat as you do with gas. At least you can regulate the size of the flame with gas. With Electric, if you turn down the heat you have to wait a couple of minutes for the heat to subside.

Well, with gas, when the burner is off, it's off, but with electric there is residual heat. I think it just takes practice getting used to what you are cooking on. I just got a gas cook top and was wondering the same thing about gas.

Maybe you should instead try the Aunt Jemimah treatment on a gas burner, sure that would leave you singing the prasies of electric.

More than what, compared to gas, I believe electric stoves heat more slowly and do not get as hot.

I burn myself more. When you stick with food that is microwavable or pre-cut you don't worry about getting cut too much. But I'm a klutz so if I used sharp knives more often I would probably cut myself too.

I feel like I can control the heat on a gas stove more! Maybe that's why!

Because you can't control the heat as well. This is why chefs prefer to cook on gas stoves.

the grills heat up and they get real hot. Unlike gas you can not turn them down fast. Then many things burn until you get to like them
