Because Disney found a formula that worked for them early on, and stuck with it.
It sure makes you sympathize with the main character more...

Sometimes, it gives the aduience sypathy for the protagonist , like in "Bambi" and "Aladin", amking you feel the character wheter it made them a loner or showered them with a little depression.. The main fact is that they grow stronger with these obstacles...
Or sometimes there is no need to add more characters, like in "Beauty and the Beast"
This also reminds me about the formula for their Princess', they all fall for their Prince, but this years half-animated feature, "Enchanted" will change this perception.

The loss of a parent brings an enormous amount of greif to it's loved ones, and I would think it would effect the way the house runs, and how it brings family closer to fill in what is missing. It could be for plot purposes.

Thats the way that the stories or fairytales from which Disney drew their material were written; and as those stories didn't involve killing the absent parent they went with it (The reason Bambi's mother died has to do with the hero/quest method of storytelling)

Disney movies are actually quite dark, and the death of a mother is one of the scariest things a child can imagine.
