My girlfriend told me that she was offended by me leaving a few gifts out about three days after Xmas. She said that by leaving them out, instead of putting them away, meant that I did not have any use or care for them.

well now...we have to be fair about this thing. It would depend greatly on what kind of things you left out. Now if it were sex toys--hey definately use them right away...oops, i mean put them where they belong, up, down, around. but if its clothes or something like that I would make sure I put them away soon after (and only cause i've got a cat and i wouldn't want it to sleep on them.) seriously though my kids have things they still haven't put away that doesn't mean they don't care about it. it just means they're lazy.

That's ridiculous. It's crazy during the holidays and if something is left out for a little bit, then who cares. However, clearly it matters to her. Tell her you don't see it that way and so you didn't realize she would. Reassure her that you appreciate the gifts, and in the future be sure to put away her gifts right away since it will make her feel better. Also, tell her that next time you will make an effort to do that for her. Good luck with that.

Tell her not to be silly = maybe it just means you are proud of them and want people to see them. (Which they CANT do if they are put away) I always leave mine out and under the tree for a few days
