The character has the element of fire, but her personality is the complete opposite of fire: sweet and calm. What are the different jobs in a small town in a midievil/fantasy setting?

Well, fire is traditionally associated with alchemy, the "science" of transmutation...in a fantasy world, someone who was associated with fire but was sweet and calm could make and/or sell tonics and simple potions - ones to heal boils, improve memory and so on.
As for a race...dwarves could be associated with fire, because they are always associated with metalworking - but they could just as easily be said to be an 'earth' race. Frankly, I'd go with humans - like a flame, they burn out quickly (short lifespans) and can get out of control quickly (impetuous and shorttempered), but they are also capable of doing great works of light.

If you are trying to figure out which job suits this character, I recommend a priest. A priest that can fight. A priest is a healer, suiting her calm personality. However the fire element can allow her defense in a war, allowing her to fight and heal.

Why not a blacksmith.
might be simple but you can make your own weapons, even create a new one if you can.
I have seen quiet a few movies with calm and quiet sweet gentle blacksmiths.
You can be alot of strong like creatures. dwarf, human, etc.

She could be a dancer/prostitute at a lounge/house of ill repute! That would allow her fiery nature to come through (and increase her renown) while she could remain sweet and calm when she wasn't 'working'.

Priest or palladin.... these would suit your character. stick with human or elf.
