I guess you're making a kitchen volcano. Such a volcano erupts because of an acid-base neutralization. Baking soda (sodium bicarbonate) is base or alkali substance in this situation, so it could be replaced with another alkali. One example is sodium carbonate, also known as washing soda. You could also use lye, but it is a much more dangerous substance to work with.
