if you like quality and quantity you want to consider, the buffets at Mandalay Bay, Aladdin, Mirage, Bellagio, Wynn and the Rio. While each of these buffets tend to be on the higher end of the price scale you need to know that you do get what you pay for.

BUT the 2nd websites lists the Bellagio and Rio under raw foods & vegetarian restaurants in las vegas:

I would recommend the Bellagio buffet. There were a lot of great selections. My mom is a vegetarian and she really enjoyed it. They had french toast, breakfast pastries, waffles, pancakes, everything you could think of. There was a good variety of fruit and so many different desserts! I'm not sure if this is included in breakfast because it ran into lunch, but there were also vegetables, a salad bar, mashed potatoes, and pesto mashed potatoes. I can't remember too much more, but the buffet was very good. I think you'll really enjoy it.

I would prefer a hotel with room service for breakfast. Stay in bed and relax.

MGM Grand has a GREAT buffet. Check them out. I am a vegetarian and it had allot of items. Don't go to Circus Circus as the first person said. That place has run down big time.

Circus Circus by far! Treasure Islands did have a wide variety of fruit but I found it rather expensive. Monte Carlos was nice as well as the Luxors. Stay away from The Flamingos. We got a bad stomach ache from that. Hope this helps.

We went to the breakfast buffet at the Excaliber - it was REALLY good. For dinner I HIGHLY recommend the buffet at Treasure Island - there is just about everything you could ever want! The best by far in my opinion.

I don't know about the vegetarian part, but Treasure Island was my favorite. Lots of variety.
