My outlet covers don't cover the entire hole that the outlet resides in so I need some advice how to fix this.

Durabond brand drywall compound. The regular stuff is very weak after it has dried. You have already lost a lot of strength by putting in the patch. Regular compound won't last too well.

You can actually go all the way up to the electral box. Do NOT go inside the box. Do NOT let any of your tools get inside. If you accidently get some compound into the box, do NOT put your finger in. You could easily go between the hot and the box and possibly shock yourself pretty good.

I have done this many times. It works out very well. It is a good DIY job.

the easiest fix is to use oversize outlet covers, instead of the plastic 2x3" ones get the 3x4" ones. if that doesn't cover the holes you will have to fill in AROUND the outlet boxes with compound and tape over it, then more compound to spread the 'fix' out so that the lump isn't noticeable and re paint to match.

Just use drywall mud to cover the hole.

if its not too big a hole just use spackling
