I'd probably start with something along the lines of just what makes a good arrangement great, like color, balance, texture, tall vs. short arrangements, wide vs. narrow, etc. Good luck! Sounds like an interesting English class!

Maybe you could look at the making of the actual flowers, the upkeep of them, the cost to make verses the selling price, the benefits of silk verses real.
