cut a piece out of an egg carton to hold the egg up right. You also glue the egg in place to keep it from shifting. That'll do for your vertical experiment.
For the horizontal, just glue the wide side of the egg down on some cardboard or wood. Elmer's glue should work for both situations.
As for the books slipping, once you determine how much weight it takes to crush the egg, that won't be an issue. Once the egg crushes, the books won't slip!
Be prepared to prove that it takes many times the weight to crush a vertically positioned egg vs. a horizontally positioned one.
If you can put "X" number of books (with "X" weight) on a horizontal egg and it crushes, then you can put the same weight on a vertical and prove that it won't crush under the same weight.

To stabilize the egg, you can use a block of material with an egg-sized hole in it. You'll need two - one for vertical and one for horizontal.

To stabilize the books, maybe you could attach them via a harness to a pressure plate that rests on the egg, and let the books hang below the egg. The egg and its holder would be on a beam.

Get 2 pieces of wood or cardboard shaped so they cradle the tip and the opposite side well and have flat surfaces to the bottom (the stand) and the top (where the weights get placed).

Try using woodworking vices or clamps to hold the egg in position.

How about supporting the egg with a collar made from a toilet roll tube?
