There are direct routes that do not require any transfers leaving from Oxford Road with Central Trains. The trip takes you about 4.5 hours. Or you can take the train to London Euston using Virgin Trains, use the tube to get to Liverpool street. Then, using one Rail, take the train to Norwich. Use this site to plan your trip.

see the national rail website - probably the most direct route is to birmingham and then across country changing at peterborough. That said, the peterborough train is quite slow, (at least it was 10 years ago, which isn;'t helpful I know), - if you can get a fast train to london from manchester, norwich is 1 hour 50 mins from london liverpool st by train - not the obvious route, but worth considering if the cross country routes are all very slow.

There's no journey without a change, but the best option with only one change is Manchester to Sheffield then Sheffield to Norwich.
