Both Apocalypse Now and Platoon have been praised by by vets as being pretty accurate, within the bounds of the stories they're telling.
Hamburger Hill, a 1987 film by John Irvin, seems closest to the war in some ways for me, since it reminds me so much of the guys I knew who were in the conflict.

My husband ( who was in Vietnam War) says that "The Green Berets" depicts very accurately the booby traps and the foo-gas(a mixture of gasoline and kerosene) our soldiers encountered in that conflict.
