He wants a vegetable, not a starch and needs something w/ a reasonable food and labor cost. I would do a lightly steamed/boiled vegetable medley tossed in a little butter after cooking. Not sauteed. This is low cost, fast and simple. Concentrate on making the steaks the focal point of the meal. As long as the veggies are fresh, not overcooked and presented nicely on the plate people will love them. This way you can also rotate different combinations and use seasonal products so you have the best quality available
We usually used different vegetables for each dish because our menu was kind of eclectic and we needed to match the sides to the entree. But in a steakhouse this isn't really necessary.

The potato
preferably baked and with VERY unique add-ons (there have to be a thousand of them) --- baked potatoes Are the side for Steak---could not BE anymore midwestern--- and the ease of producing them is a no brainer---the twist and the Unique in the mix here is the inventive nature with which you approach the ADD-ON's !!!!

Snap pea pods are usually a good idea. They can even be served raw. My kids like to open em up to get the peas out of the pod.

As for stuffed. You can easily pre-make a ton of little stuffed zucchini, freeze em, then heat em up as necessary.

How about roasted winter vegetables, like beets, sweet potatoes, etc? They are colorful, so look lovely on the plate, go well with meats, healthy, and taste fabulous!

grilled asparagus is good, though seasonal. How about sweet potatoes, fried, mashed or baked? Fried okra? Green fried tomatoes (definitely midwestern)?

I work in a steak house and I think the most popular request is aspargus which we have. The second most popular is for corn.
