You should make as much eye contact as possible. Looking someone in the eye is a sign that you are telling the truth and that you are confident in what you are saying.

Engage them throughout the interview, but be natural and be yourself. They don't want to get to know your eyes, they want to get to know you.
You shouldn't leave the room without satisfying them that they can depend on you if you were to start work immediately after the interview.
