I would go for a Melted Jalapeno Round on white,whole wheat. or rye bread. that is Jalapeno Cheese you could also add tomatoes. I used to make these at home, I would take a large glass and cut out the rounds.

Try different, yet fresh ingredients. Try Gouda cheese on pumperknickel bread, w/ roast beef, banana pepper, red onion, and mayo. Or try Brie cheese on french crusty bread, w/turkey, honey mustard, and tomatoe. Put something together that would satisfy the pallete!

ham and cheese is good, mixed cheeses are good, grilled cheese id good, vegetarian cheese sammiches are good,bagels and cream cheese is good. Get creative and do the Celery with Melted Cheddaar, or Tomatoe with a good Piper Jack.

OOH. a good south african cheese and tomato sandwich. Simply use a good soft cheddar and lay razor thin slices of tomatoes over. Then grill.
