You've got it backwards. Blue stars are hotter than red stars. The reason is that thermal radiation peaks in shorter (bluer) wavelengths as temperature increases. You can see this effect in the burner element of an electric stove, which goes from a dull, deep red to bright orange as its temperature goes up.
