I am currently running 225/50/17 on stock infinity/nissan 17x7" wide rims. but would like to put 235/50/17 on the 17x7" wide rims. so would it be safe to run 235/50 on 7 inch wide rim?

That's nothing too crazy; they're only 10 mm wider. Should be safe for the rim. Just be sure they'll fit on the car.

A 235/45R17 would be a better choice, far more common, though I guess I'm not really sure what you are trying to achieve. The 225's will probably handle better on a 7-inch rim.
