I lived abroad and if I moved abroad again I would have a list of things to take with me this time, things I missed from home. Maybe you could ask her if there's anything she wants? But as she has lived there before she might be well prepared (like I would be). So maybe something personel to remember you by, like a nice photo in a frame or jewellery.

A little guide book which would show her new places to visit while she's there. It would enhance her stay.
I have lived in Spain many years and been lucky enough to travel quite a lot and I know that whichever area she is in will have exciting places for her to discover.
