Hi CloudyHeart. I've read the sensitivity and intelligence in your answers, so I gotta share this bit of writer's wisdom: write your whole first draft *before* you start your research.
Don't slip into the bottomless pit of research. I did that 30 years ago while trying to do a historical novel based on 1585-1613 Scotland. I spent over a year on it, had a suitcase and boxes full of research notes. And, pathetically, my story's still not done. Every writer will tell you the same thing: research is how we avoid writing.
Better to get yourself a couple hundred 4x6-inch cards, jot down a scene idea on each one, narrow them down to just 50 potential scenes, and put those in the right order.
Next, draft the ending scenes, then the beginning ones (easier when you know where you're going), then the middle ones. You don't need to put in dialogue, just what happens.
When your first draft is done, *that's* when to start research. That's when you'll know *what* to research.
Something else: writers who do historical fiction say you'd better really love the period you're writing about, because the only way you'll make money is to write several books about the same period -- to capitalize on your research investment.
Good luck with this!

The 13th century was the heart of the Dark Ages. We are talking serfdom, absolute authortative rule by the crown and Catholisim, and horrific conditions. People were primarily uneducated, and extremely violent or demure. Piety was not just the norm but a requirement. Time was not a factor in their lives ... meaning that they worked until the job was done and simply relied on daylight for a general sense of things. They didn't have clocks so you might meet someone at dawn but never at 6 o'clock. I would use various general sources about life during the whole medieval age instead of trying to find something specific online. Also note that as the Children's crusade was in 1212, a lot of the info on the 13th century will be too late and you might prefer to depend upon info about the later half of the 12th century instead.
http://www.historyguide.org/ancient/children.html, http://en.wikipedia.org/wiki/13th_century, http://en.wikipedia.org/wiki/France_in_the_Middle_Ages,
Some specific history of southern france region annexed around that time:
Languedoc is a historic province in southern France, bordering the Mediterranean Sea on the south and the Rhône River in the east. MONTPELLIER and TOULOUSE have long been the leading cities. The troubadour poetry of Langue d'oc flowered from the 10th to 12th century. During the same period, the ALBIGENSES, a religious sect, enjoyed a wide following in the area. In 1209, however, Pope INNOCENT III declared a crusade against the sect, and Languedoc was subsequently invaded by northern French troops. By the mid-13th century, Languedoc had been annexed by the French crown.
