ammonia does evaporate, but if it is in water then the water will evaporate long before the ammonia does. So from a fish tank, no the ammonia will not evaporate just get stronger as the water evaporates.

Yes and No. NH3 ammonia when heated will vaporize and "evaporate", this is how Ammonia Absorption Refrigerators work, commonly found in RVs (even then as the ammonia cools, it returns to begin the process over which is how this cools the refrigerator). Ammonia carbonate, often found in cooking will also "evaporate".

But the NH4 common as a waste from fish does not generally evaporate under normal aquarium conditions (unless you boil your aquarium, and some vapors do get expelled thru surface agitation which is why you can smell an aquarium with high ammonia, but even this process will take quite a while in a normal aquarium); NH4 can be changed to the much less toxic ammonia by products such as prime, or by lowering the pH to 6.4 or less.
But the proper way to remove ammonia in aquariums in through bio filtration where aerobic bacteria that form in your filters convert NH4 to nitrites NO2 and then to Nitrates NO3.

No only H2O evaporates leaving behind anything else you put in the tank. Air stones rid water of carbon dioxide and carbon takes out chemicals and odors.

Yes, that's why you can smell it. What you smell are fumes, an indicator of evaporation. Does it dry out when spilled, Yes, due to evaporation.
