Oddly enough, Metallica's "And Nothing Else Matters" sounds great on an acoustic guitar. This version is also pretty simple. When I pasted it here, the chord changes all bunched up on at the beginning. Listen to the song and you'll hear when you should change chords.

Here are a couple of songs that I think would be good:
Eric Clapton: Tears in Heaven
--Not difficult to learn the basic parts. Just mix and match to whatever sounds good. Shouldn't take you a week to learn.
3 Doors Down: Here without you.
--Not tough, just need a capo and a little practice
Foo Fighters; Big Me
--Simple Song. Just play the rhythym parts and you'll be fine. Won't take you a day to learn.

All the choices in the post are good choices.. For me, I've played jazz and chord melody type solo's for yrs.. I'd play some brazilian tunes.. Romantic music.. Jobim wrote some very nice tunes..

Accoustic, it Must be..
Myself I'd attempt something I can -for sure- "carry-off", alone..
so I'd go 'way back in history, -and play "Yellow Bird".
Ps: I would consider old Hank B. Marvin "Shadows" (band) tunes.. like "Theme From "Shane"; "Wonderfull Night"; "Stars Fell On Stockton", and "Come September" -IF, (on the "SEPTEMBER" one, I could arrange a 'Bruce Welch' -with his Martin -for Rhythum!)
Play something OLD (-as THAT will be more simple -like: "WIndy & Warm" -by Chet Atkins.. who had a fling with Mike Knoeffler, of Dire -Straights fame).. AND your sweetheart wouldn't of heard "HOW it.. SHOULD be , (100%-correctly), played.. -See?
-Just before he died, Chet Atkins did -with Knoeffler, his 'licks n' tricks': they did a BEAUTY: "Poor-Boy Blues" -together.. (It was very difficult to tell who WAS THE Master!)..
