You really only have one option, and it's an only-in-Vegas steak place.
No Ruth's Chris, Morton's, Delmonico, or EXCALIBUR?!?!?? on this list.
The List:
Hugo's Cellar, downtown inside the Four Queen (take a cab)
You will NEVER find a place like Hugo's Cellar. The cocktails alone are worth the trip (you'll know why when you get a snifter of 18 yr. old single malt or a Manhattan or Martini).
Dinner is a two hour experience, from the hot-rock appetizer, the tableside salads, palate-cleansing sorbet, and bananas foster desert. And, oh yeah, steaks.
It's worth every penny. Even if you are in an expense account-type business it's doubtful you've had a dinner like this before.
You can thank me later.

i imagine the suitable steakhouse i had so a techniques become the circus circus steakhouse. I been to N9NE steakhouse and 2 alternative yet so a techniques CC steakhouse is tops! Gallaghers is yet another good one i might want to positioned as an in intensity second to CC steakhouse..

Take it from a local, Hugo's is the best. It's an experience, not just dinner. Forget the strip hotels. There good but Hugo's you will remember for the rest of your life.
One more thing, you legally can not smoke inside in Vegas anymore. The strip hotels are exempt of course but anywhere that serves food, you can not smoke.

Palm Resturant in Caesar. One situation you should be aware of No Smoking in LV restuarants by law effective 8 January. This resturant is still best steak house in town and right off the casino floor[50yards] where smoking still permitted.

Prime at Bellagio was fantastic, but the emphasis is on the sauces more than the steak.
Ruth's Chris is pretty good, they emphasize more on the steak than anything else.
But I've heard really good things about Hugo's. I plan to check that place out on my next Vegas excursion.

The Excaliber has a restaurant that I think is called the Prime Rib Rack. They bring the prime rib out in a covered roaster. It was delicious. My husband and I eat there every time we go to Vegas.
