They typically don't perform what's called "unsimulated sexual activity" for the camera, they have simulated sex (where no actual coitus occurs), acting as if it were real -- so realistic looking it convinced U and probably 1000s of other viewers! Hey, they are actors, getting paid massive paychecks per film to act -- go figure! The actors have to make it look believable that they are actually doing "it," to sell the illusion, but U R right, they won't perform a sex scene on camera without receiving an NC-17 rating -- which would doom maximizing the film's revenues. Although rumors fly about whether the sex in the film was real or not (such as with "9 1/2 Weeks"), wikipedia has a list of worldwide movies released with "unsimulated sexual activity" on camera, but note many scenes didn't make it to the theatrical release (due to the NC-17 rating factor again). However some directors have promised, or actually have included some of the cut scenes as added extra footage to help stimulate DVD sales.

I heard somewhere that in Eyes Wide Shut Nicole Kidman and Tom Cruise are actually having sex in the love scenes. Whether or not that's true I don't know ... but they were married at the time, so why not? Apart from that I think it's just porn that has 'real' sex.

Depends. How many X's were on that movie?

Actually, I don't think they do, except in real porno. After all, it would mean all sorts of complications. But they are actors, after all, and can act things you and I can't imagine faking. Weren't you able to believe it when they faked dying? Why not when they faked sex?

Hardly ever in mainstream films, they just simulate it by writhing around naked with all the bits and pieces flopping around uselessly just out of view. In some films (more and more now) there is actual unsimulated sex, but it's only ever done where the film-maker wants to show the actual intercourse and leave you in no doubt!

While it's not usually the case, there are a few 'mainstream, non-porn' films in which the actors are having sexual intercourse. You just don't see the whole event.
