Many reasons. You can explicitly discover the controlling idea. You can discover how the author structured the story, and why. Discover how the characters were created and why. Etc... Essentially, you deconstruct the book to see how the author created it which will help you to see what the author was thinking. This is important if you're curious or if you want to know more about the book or if you're a writer who wants to learn how to do it.
