Basically, the human body is made up of a high percentage of water. It is the essential solvent for human to survive because it helps in "removing" heat in our body, remove waste material and is essential in some metabolism activity.

We are losing heat every moment but when we perspire, we are losing more heat than usual. Without water, you are likely to feel hotter because the cooling effect of evaporation of water is essential to help you feel cooler.

Urine consist of mainly water. If there is no water, you cannot remvoe the nitrogeous waste and excess salt content. All these removals are essential because the excess amount of salt would cause water to be removed from the cells via osmosis and cells shrink. Excess nitrogen content would poison the body.

Many of our human metabolism and bioprocesses requires oxygem. Even the breaking down of protein requires water; hydrolysis.

There are many other ways water is essential to our life.

Well, I think it is a nutrient that the body can not build on its own and must receive it from the exterior of the body. For example, the human body need ( i think ) 14 different nucleic acids, however it only produces 10, thus it must acquire theses special essential from outside sources since the body cannot manufacture these.
