heat -holding capacity. how does this help our bodies to function propley?

Homeostasis. Once warmed (or cooled) the large heat capacity allows the body to be less susceptible to fluctuations in the environmental temperatures.

The capacity of water to be able to hold heat allows our bodies to function. So many enzymes/ (amazing machines made of proteins) depend on a specific temperature to work - enzymes are everywhere and they allow you to live. If too hot or too cold, these enzymes will breakdown and/or stop working totally. The miraculous thing about water is that is holds the heat for these enzymes to work. Enzymes are just a small part of the body that depend on water's great heating capacity.

In general - our bodies depend on a constant temperature to maintain homeostasis. But we can also heat or cool off to change temperature (using muscle activity and sweating), depending on the state of our bodies (ie. exercising or resting or in very cold weather etc.) It's amazing!
