It's actually a different part of the pig, and always salt cured. I also find it a tad fatty, though if you precooked it - maybe with a splash of water at the end of frying it, then put it in the cooking omelet, you could get away with calling it a substitute for bacon.

Scooter, again with the cheese. Cheese omelet wins every time. Plus, there are very few cheeses that don't go well in an omelet. From cheddar, to pepperjack, to feta (personal fave) to cottage cheese. It's so easy to tell where I'm from. LOL But I'll take bacon and mushrooms next!
