on exhaust gaskets, does the shiny metalic side go towards the block or towards the manifolds?

They can go either way as long as they fit correct. they will both be hot on either side so it will and does not make any differance which way they go

The shiny side goes towards the manifold to allow movement

It goes towards the manifolds.....facing away from the head.
