When setting up a range extender for an exisiting router, the first instruction is to plug the range extender's ethernet cable into an open switch. Are they talking about and open ethernet plug on the router.

Yup!

SOHO class routers typically have a built-in 4-port switch.

If you don't have any open switch ports on your router you'll need to daisy-chain a stand-alone switch to a port on the router and plug any other cables into the switch.
