The saliva makes the food going down much easier so it won't be rough.

Caroline s is right, also it helps with taste...try this, get as much saliva out of your mouth as you can by swallowing, then stick your tongue out and dry it off w/ a paper towel put something on it like sugar or salt...see you can't taste it!
