"We do not have enough data" or "The data we have is not sufficient " seems to be better but I cannot understand the logic behind!
Apparently It just doesn't sound right.

Just to confuse matters "the data we have is not good enough" would be perfectly fine, but why??

Data is a plural. IS refers to the singular (datum).
