Lenny is yellow, but I think you meant Carl. The reason Carl is not yellow is to show diversity in the show rather than making it seem like an all-Caucasian show. Dr. Hibbert, Apu are not yellow either. The yellow character seems more attractive because yellow is a very obvious color to the human eye. Plus, this breaks the flesh-tone barrier to cartoons in which all human character were usually flesh-toned, and I am guessing he wanted the colors to be different, and to be completely different from other cartoons. I would have done the same too. And it certainly worked extremely well.

The illustrator of the show Matt Groening drew the Simpsons as yellow to attract viewers when they are browsing through the channels. Yellow would stand out best, and he wanted more people to watch it I guess.
