All the boys had the name of their father (Brady)and the girls had the name of their father (I'm not sure what it was). When Carol and Mike got married the boys kept their last name and the girls adopted their new father's last name. And that's the way they all became the Brady Bunch!

Because The Brady-Smith Bunch just doesn't have the same ring to it. (By the way, I'm just guessing at Carol's former last name. Was it ever mentioned on the show?)

Mike Brady adopted the girls and they became the Brady girls.
EDIT TO ADD:
So they could all be one family. If I'm not mistaken there was an episode where this topic was covered.
It happens all the time. My step-dad adopted me when I was little, giving me his last name.

Father married his sister. Network didn't like the sound of
"The Redneck Bunch"
so they called it the Brady Bunch instead
