I used to work for a car development centre, and had contact with some of the contract drivers.
I don't know how they were found, but they all had at least 15 years driving experience, and most had more (the cars they were driving were very valuable to the programme - an accident could have delayed the launch of a new model by months). They were not permanent staff, so if they weren't needed because a car was off the road, they didn't get paid.
The driving they did was of a "mileage accumulation" type - just driving normally for many hours, including night shifts. The more advanced testing (ride, handling, NVH, performance, abuse, etc.) was carried out by the test & development engineers - if you want to become one of these you'll need a relevant engineering degree. I think some of the best contract drivers did get to accompany the engineers and technicians on the climate-testing trips to the desert and the Arctic.

Another possible alternative is to get a job driving test cycles for one of the test centres (Millbrook or MIRA), but again you'll probably need a lot of driving experience, and I can't imagine a night shift of 80mph round and round Millbrook's bowl is very interesting.
