Brazil and Time Bandits, though I do like 12 Monkeys as well.
He's got the most amazing imagination, and although his films freak me out, I still enjoy them.

I'll presume you mean post-Python. It has to be The Fisher King for me although I like most of his stuff just because it's so different to watch than most other directors (even if they're not always the best films).

The Adventures of Baron Munchausen wins my best vote---beautifully designed, great characters, captures the spirit of the best of folk and fairy tales but with a mind-bending modern twist or two--makes fantasy truly heroic!

The one's his directed? I like them all, but if i had to chose then probably Twelve Monkeys. I wish his Man of La Mancha was finished, that would've been great.
