Most tortoises sexually mature at about 4-8 years depending on adult size (smaller tortoises mature faster).
Male tortoises seduce the female with a species specific ritual. The Red-foot tortoise, for example, stands to one side and does a specific 'head swing' maneuver.
Once they find a receptive female, the male climbs on her back. The male's belly shell is curved sharply inward to allow a better mechanical fit. Once in position, it will reach its long tail under the female's shell. It will line it's cloacal opening (vent) up with the female's, then extend its organ into the female's.
Intercourse can last a while (but not for the mythical hours and hours) during which time they can make an interesting variety of noises.
