Otherwise great housemate and friend; but she takes my stuff and doesn't tell me and I have to go looking in her room and sometimes its used up or destroyed! How do I deal with this?

I would suggest sitting down and talking to her about the issue. Tell her that she must ask permission before borrowing your stuff, and that you want to get your stuff back in the same condition that she borrowed it in. Be firm with her, yet at the same time, be friendly.

Get a lock and put on you door and keep the keys with you at all times so she can't make a copy.
Tell her up front that the next time she takes something of yours without asking, this WILL be done. Let her know that she is Soooo great but it really bothers you to have things taken (stolen!). Maybe she has never seen herself as a thief, so enlighten her first.

Locks and notes. Lock your room and leave notes on things in the fridge you really want. A note saying this is for my lunch do not eat. A lock on your door will keep your stuff yours when you are not at home.

You can tell her in a nice way that you dont like that shes getting ur stuff witout ur permission and in case she needs to borrow something and ur not there,then it means she cant have it.im sure she will understand u.if not,then u would have to really lock ur room.
