there are some organic compounds that can conduct electricity (organic conductors)

salts, solubilized in water or any other solvent that can solubilize them conduct elecricity.
molten salts conduct electricity

ionized atoms or molecules can conduct electricity

but everything depends of the voltage ! if the voltage is high enough even an insulator can conduct electricity ! AIR is a good insulator, but if the voltage is high enough you can have a lightning !

Carbon is a good conductor, I dont think its a metal. I am sure there are many more. Some inert gases when exposed to high voltages conduct electricity.

Anything is a conductor under the right conditions. E.g. a tree being hit by lightning.
