I would have to say that Dance, Dance by Fall Out Boy has a really really easy drum beat to follow....I always play to that song...:)

Try listening to some Rush, although they are quite difficult to keep up with.
Tom Sawyer has a great beat, YYZ has a masterful but hard beat.
